Chicken fajitas are an easy and flavorful classic Mexican recipe. Juicy chicken is seasoned, seared and cooked to perfection, then tossed with sauteed bell peppers and onions. The chicken fajitas are served with warm tortillas and toppings. You can’t beat this healthy family favorite recipe.
Ingredients:
- Four tablespoons of olive oil
- Two tablespoons of lemon juice
- Teaspoon salt
- Teaspoon dried oregano
- Teaspoon ground cumin
- Teaspoon garlic powder
- Teaspoon hot pepper powder
- Teaspoon paprika
- Half a kilo of boneless and skinless chicken breasts, cut into thin slices
- Medium sweet red pepper
- Medium green pepper
- Four green onions, finely chopped
- A cup of chopped onions
- Tortilla bread
- Season the chicken, generously sprinkle the fajita seasoning on both sides of the chicken and use your fingers to apply pressure
- Add a tablespoon of olive oil and continue stirring until the ingredients are mixed together. Add the chicken slices, and stir them well until they are completely covered with the seasoning, then cover the bowl and put it in the refrigerator for a whole night.
- Cook the chicken. Heat a large skillet over medium heat and coat it with a little olive oil for 7-8 minutes on each side. Then remove from the pan and let rest for a few minutes before slicing
- Fry the bell peppers and onion. While the chicken is cooking, cut the bell peppers and onion into thin slices. Then fry them in the same pan over a medium heat for a few minutes until they are caramelized
- Add the chicken back to the skillet, tossing everything together
- Serve with tortilla bread and additional toppings
