Unlike a traditional baked potato, the sweet potato has the option of going sweet or savory, packs a ton of vitamins and nutrition, and is arguably the most kid-friendly vegetable.
Ingredients:
- Coarse salt
- Two sweet potatoes, diced
- ground black pepper
- Half a cup of Parmesan cheese
- Two tablespoons of olive oil
- Stir sweet potatoes with pepper, salt and oil in a bowl
- Spread the sweet potatoes in a baking tray and bake them at 200°C until soft
- Sprinkle cheese on sweet potatoes and continue baking until crispy and golden
